**Position Overview:**
The Sous Chef for the Chinese Kitchen at East Court will play a critical role in supporting the Head Chef in delivering authentic and exquisite Chinese cuisine. This individual will assist in maintaining the high standards of culinary excellence, creativity, and consistency that East Court is known for, ensuring the preparation of dishes that are unique and rare in Malaysia. The restaurant is running on 24 hours thus we are seek individuals who are willing to work 6 days a week and night shift.
**Key Responsibilities:**
**Support in Culinary Operations:**
- Assist the Head Chef in preparing authentic Chinese dishes, focusing on traditional recipes and rare culinary techniques.
- Oversee the kitchen team in the absence of the Head Chef, ensuring seamless operations and adherence to standards.
**Food Preparation and Quality Control:**
- Ensure all dishes are prepared to the highest standards, with attention to detail in presentation, taste, and authenticity.
- Monitor and maintain food safety, hygiene, and quality standards as per regulatory and restaurant requirements.
**Menu Development:**
- Collaborate with the Head Chef in developing and refining menus, introducing unique Chinese dishes that appeal to discerning customers.
- Research and experiment with rare ingredients and techniques to innovate and elevate the dining experience.
**Team Leadership and Training:**
- Assist in training and mentoring kitchen staff on authentic Chinese cooking methods and techniques.
- Foster a positive work environment, encouraging teamwork and continuous improvement.
**Inventory and Cost Management:**
- Assist in monitoring inventory levels, ensuring the availability of fresh and rare ingredients for menu preparation.
- Work with the Head Chef to control food costs, minimize waste, and maximize profitability.
**Customer Experience:**
- Ensure dishes are prepared and served promptly, meeting the expectations of high\-quality dining experiences.
- Address any kitchen\-related issues or special requests with professionalism and efficiency.
**Qualifications and Skills:**
- Proven experience as a Sous Chef or senior\-level kitchen position, specializing in authentic Chinese cuisine.
- Expertise in traditional Chinese cooking techniques and knowledge of rare and premium ingredients.
- Strong leadership and team management skills with the ability to motivate and inspire staff.
- Familiarity with food safety and hygiene standards.
- Creative, detail\-oriented, and passionate about culinary excellence.
- Ability to work in a high\-pressure, fast\-paced environment.
- Proficiency in Mandarin, Cantonese, or other Chinese dialects is an advantage.
- Willing to work night shift, weekends, public holidays
